Homemade Ravioli

 

What else to do on a icy kind of laid back day but to cook?

Nick and I made homemade Ravioli! They were pretty darn good!!

Dough

6 Cups All Purpose Flour
2 tsp. Salt
2 TBS. Olive Oil
6 Eggs 
Hot Water

In mixer using the dough hook, mix the flour, salt and oil.  Add 1 egg at a time.  Mix until dough forms a ball.  Add very small amounts of hot water to the dough if needed.

Remove the dough from the bowl and and knead the dough for 10 minutes on a wooden surface.  (I used my granite counter and that seemed to work fine)  Rub oil on the dough ball and wrap in plastic wrap.  Let sit for 30 minutes.

Filling

2 Lb. Ricotta Cheese
1 Cup of Parmesan Cheese
2 Eggs
Salt and Pepper
Lots of Fresh Parsley

Mix all ingredients in a bowl until mixed well.

At this point you can make the raviolis any way you would like.  You can roll the dough out thin and place tsp. dropful of cheese mixture on the dough and make them that way.

I chose to use a ravioli maker.  We rolled the dough through the machine and made flat pieces the length of the maker. 

 

 
 (We had a little unsolicited help!)


Then place a spoonful of cheese in each section, lay another rolled piece of dough on top and roll with a rolling pin.








Boil salted water and place the raviolis in the water. 

Cook 2 minutes and remove to a casserole or bowl.  
 
Top with your choice of gravy...  YUM! YUM!!
